Soya Manchurian
Ingredients
Method :
Soak Soy chunks in water for 15 min. Squeeze out excess water. Cool nicely. Coat soy chunks with refined flour and corn flour. Add salt and white pepper powder. Deep fry in moderate hot oil until lightly browned.
Remove, keep aside. Now heat oil in a bowl, add garlic and green chilles, stir for a few moments, then add soy sauce, cook again for a minute, add water and bring to boil. Dissolve corn flour in a little water, add this to bowl to make a medium thick. Add deep fried soy chunks. Bring to a boil. Serve hot.
Soya kofta Curry
Method :
Soak soy granules in lukewarm water for 15 minutes. Squeeze to remove excess water.
Boil potato in salted water, peel and then mash. Mix soy granules, mashed potato, green chilles, numteg powder and salt. Add besan to this mixture, mix well and then make small kofta. Deep fry thes kofta in moderate hot aoil until crisp.
Remove and keep aside. Heat oil, add bayleaf and boiled onion paste, cook till oil starts separating. Add ginger, garlic paste, tomato paste, cook for a moment then add red chilly powder, cook nicely. Add water, put garam masala, adjust salt and then put kofta and green coriander. Cook till done. Serve hot.

Soya Cutlet
Method :
Soak Soy granules in water for 15 minutes. Squeeze in hand to remove excess water. Boil potatoes in salted water, peel and then mash. Wash and chop green chilles . Clean, wash and chop green coriander leaves. Heat oil, add coriander seeds. When it crackles, add ginger paste, garlic paste, green chilles and stir for a moment.
Add red chilly powder, coriander powder, turmeric powder while stirring continuosiy. then add soy ganules, cook till granules are cooked and dry. Add potato, add salt and continue cooking till masala compeltely dries up. Remove and cool it. Now mix well with breadcrumbs. Divide into small equal portions, give each portion a cutlet shape. Deep fry in moderate hot oil until crisp. serve hot.

KADAI SOY
Method :
Soak soy chunks in lukewarm water for 15 minutes. Remove excess water by squeezing. Heat oil, bayleaf, coriander sedds and dried red chilles, cook for a moment, then add onions. cook till golden brown in color.
Add ginger, garlic paste, stir and add tomato paste. add chilly powder, coriander powder and salt. mix well.now add soy chunks, cook till done. serve hot, topped with roasted coriander seeds, dried red chillies and chopped green coriander.
